Kitchen Perfection - A Tribute to Erin French and Cast Iron

Erin French, chef of The Lost Kitchen is known for incredible food, locally sourced and prepared to perfection. We will focus on her most recent cookbook, Big Heart, Little Stove, plus feature two cast iron skillet recipes. We will begin with Cast Iron Focaccia—and for those eager to learn more about baking focaccia or pizza in a cast iron skillet you will love this first course as focaccia and pizza share many preparation and baking similarities. We will follow with Erin French’s Garlicky Filet Mignon Steak, sizzled to perfection in a cast iron skillet. For this delicious class we will begin with a prime cut of steak, that restaurant style quality, unsurpassed in flavor and tenderness. We will accompany the steak with the Lost Kitchen’s mashed potatoes, flavored with bay leaf and thyme and Green Beans with Sage, Garlic and Bread Crumbs. The finale will be Erin French’s Old Fashioned Apple Walnut Cake, an ideal dessert for autumn. This class is for everyone who longs for dinner-time excellence, as well as for all of you who send a postcard to Erin French every spring, hoping to be one of the lucky, few selected to eat at The Lost Kitchen in Maine. 7-Course Italian Dining Experience

Prepare to spend an elegant 7-course meal with Chef Francesca. This will be a dining experience and not a “cooking class”. You will begin with Caprese Bites and Julienne Veggies with a creamy dip. Then enjoy Zuppa Tuscana with Garlic Herbed Crostini to be followed by Italian Salad with Balsamic Glaze dressing. Mozzarella Crusted Baked Ziti and Fish en Papillote, Mediterranean style, will be the two main entrees. You will finish the evening with a variety of Italian Cheeses and fruits, espresso, and Francesca's homemade tiramisu. $85 per person

Dinner in Wine Country

Enjoy an appetizer of Grilled Brie with honey and berries to start the evening. Then we will serve up Chef Matt's signature soup, Tomato Cognac Bisque. The salad for the night is a fresh spin on a classic Nicoise. Entree for the dinner is another favorite of Chef Matt's, Beef Bourguignon with Whipped Potatoes and fresh vegetable. The dessert rounding out a beautiful experience is fresh baked creme Puffs with salted caramel, pecans, and ganache. $75 per person

Our Annual Holiday Tea! Holiday gatherings are the most fun and we will help you be the gracious host. We will share everything you need to know to host your own event in the style of a classic, elegant English afternoon tea—but rest assured, the evening will be packed with fun, laughter, holiday cheer and scrumptious food. Come hungry as the plentiful array of sweet and savory recipes will be delicious and everyone is sure to love it. Plus, you will leave with all of the recipes and tips, so you can easily host your own holiday party or bake a tasty bite for someone special. We will begin with scones, served with clotted cream and our own, homemade strawberry jam, then we will serve course after course of unforgettable bites and sweets. Make sweet memories. Start with a small pasta dish, penne marinara, followed by the entrées: Arancini (rice balls), Braciola (stuffed round steak), a simple Italian salad with balsamic and olive oil dressing, and crunchy Italian bread. Conclude with her homemade cannoli. $75 per person
Italian Farmhouse Holiday Dinner

You will enjoy some Crostini ala Romana as you arrive. Soup for tonight is a Tuscan Vegetable with Pancetta. Salad for the dinner is fresh greens with a Fruity Balsamic dressing and garnish. It's tradition Chef Matt carries on with his Wood Fired and Slow Roast Prime Rib of Beef, with Roasted Garlic Whipped potatoes and vegetables. Dessert to cap off the evening is Chocolate bread Pudding with a Salted Caramel Vanilla Custard Sauce. $85 per person
