Erin French, chef of The Lost Kitchen is known for incredible food, locally sourced and prepared to perfection. We will focus on her most recent cookbook, Big Heart, Little Stove, plus feature two cast iron skillet recipes. We will begin with Cast Iron Focaccia—and for those eager to learn more about baking focaccia or pizza in a cast iron skillet you will love this first course as focaccia and pizza share many preparation and baking similarities. We will follow with Erin French’s Garlicky Filet Mignon Steak, sizzled to perfection in a cast iron skillet. For this delicious class we will begin with a prime cut of steak, that restaurant style quality, unsurpassed in flavor and tenderness. We will accompany the steak with the Lost Kitchen’s mashed potatoes, flavored with bay leaf and thyme and Green Beans with Sage, Garlic and Bread Crumbs. The finale will be Erin French’s Old Fashioned Apple Walnut Cake, an ideal dessert for autumn.
